Summer Lunch

Hey you,

what’s better than whipping up some healthy ice cream for lunch during those warm summer days? This time around, I am having banana ice cream almost every day and to make it even more interesting, I am always coming up with new flavorous combinations. Though, one of my basic recipes is caramel vanilla ice cream. That is also the one recipe I am sharing with you today. To make it even more delicious, I always recommend adding some crunchy toppings and eating it out of pretty bowls or coconut shells. The meal is super nutritious, easy to digest and nicely cooling. What do we even want more?

Banana Caramel Vanilla Ice Cream


3-6 frozen bananas

some water

1/2 tsp coconut sugar 

1 tsp vanilla bean powder / tonka bean powder

Just put everything into your high-speed blender and blend until smooth. I usually top my ice cream with mulberries, raw granola, sprouted buckwheat, honey/maple syrup, cacao nibs and more fruits like for example mango. Enjoy the creamy deliciousness.

For today, I plan to work some more on the blog, soak in some warm summer sun and do a quick workout at the gym. What are you up to?
