the past week I took you with me throughout the day and showed you everything I’ve been eating. One of the recipes included in the video, I added into this article for you to recreate. Honestly, it is my favourite overnight oat recipe so far and I’ve been having it countless of times. Please let me know how you like this less curated video format. I would love to take you with me more often. This way you get a very real glimpse into my life or at least into what I am eating to stay healthy and fit. However, everything I eat has to be amazingly delicious because I believe food is something to be enjoyed thoroughly. I hope to inspire some of you foodies. Have fun recreating.

 

Coconut Overnight Oats

Prepare the night before. Makes 1 jar.

Ingredients:

3/4 cup gluten-free oats

3/4 cup coconut-rice-milk (or any other plant milk)

2 tbsp coconut yoghurt

1 tbsp date syrup

1 tsp chia seeds

 

Simply mix it all and leave it over night. In the morning feel free to add all the topping you fancy.
